Dough Ingredients:
500 g 550 all-purpose flour
7 g dry yeast or 25 g fresh yeast
300 ml warm water or milk
2 tablespoons olive oil
1 teaspoon sugar
1.5 teaspoons salt
Cheese Filling:
250 g mozzarella cheese
150 g feta cheese
1 egg (optional, for binding)
Topping:
100 g yellow cheese (e.g., Gouda or Cheddar)
1–2 tablespoons olive oil
Fresh parsley for sprinkling
Preparation:
Mix the yeast with warm water/milk and sugar and set aside for 10 minutes until it begins to activate.
Add the flour, salt, and olive oil and knead into a smooth, elastic dough (approx. 8–10 minutes). Cover and let rise for 1 hour. Chop or grate the mozzarella and feta cheeses and mix (you can add an egg).
Divide the risen dough into two pieces. Roll out each piece, place the filling in the center, and fold the sides inward to form a round loaf.
Place on a baking sheet lined with parchment paper, score the top several times, brush with olive oil, and sprinkle with grated cheese.
Bake in a preheated oven at 200°C (400°F) for 20-25 minutes, or until golden brown.
After baking, sprinkle with fresh parsley.
