Ingredients:
🥦 1 medium cauliflower
🫑 1 red pepper
🥒 1 zucchini
🍄 200 g mushrooms
🧅 1 onion
🧄 2 cloves garlic
🧀 150 g grated yellow cheese
🥛 200 g 18% cream
🥚 2 eggs
🧂 Salt and pepper to taste
🌿 Parsley for sprinkling
🥄 1 tablespoon olive oil
👨🍳 Preparation:
1️⃣ Preparing the cauliflower
✔️ Divide the cauliflower into florets and boil in salted water for 5 minutes, then drain. 2️⃣ Sauté the vegetables
✔️ Chop the onion, garlic, bell pepper, zucchini, and mushrooms.
✔️ Heat olive oil in a pan and sauté the onion and garlic.
✔️ Add the remaining vegetables and sauté for 5 minutes, season with salt and pepper.
3️⃣ Prepare the sauce
✔️ In a bowl, combine the sour cream, eggs, and half of the grated cheese.
✔️ Season with salt and pepper.
4️⃣ Assemble the casserole
✔️ Place the vegetables and cauliflower in an ovenproof dish, pour the cream sauce over them, and sprinkle with the remaining cheese.
5️⃣ Bake
✔️ Bake at 180°C for 25-30 minutes, until the top is golden brown. 6️⃣ Serving
✔️ Sprinkle with chopped parsley and you’re done!
